This is a classic marriage of sweet fruit, tangy lemon and spicy pepper that awakens every part of the tongue, and will be a great seasoning for chicken, fish, or roasted tofu dishes. With so many different varieties of mangos (there are hundreds), it might be hard to pick the right one: fresh mangoes don’t have to be red to be ready—even a green mango can be perfectly ripe. Rather smell for a sweet, almost pineapple aroma and a bit of softness under the skin.
