Recipe Ingredients

  • ½ cups old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • ¼ teaspoons vanilla extract
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon maple syrup
  • ¾ cups soy milk
  • ¼ cups blueberries
  • 1 tablespoon walnuts

Instructions

  1. Add oats, chia seeds and cinnamon to a jar or container.
  2. Stir in the vanilla extract and maple syrup to lightly sweeten and flavor the oats.
  3. Add the soy milk. Mix well to prevent the chia seeds from clumping.
  4. Mash the blueberries slightly with a fork if you prefer a more blended texture and flavor. Spoon them on top of the oat mixture.
  5. Seal the container and refrigerate for at least 6 hours, or preferably overnight. Letting it sit longer allows the oats and chia seeds to absorb the liquid fully.
  6. In the morning, stir the oats and top with walnuts for a bit of crunch. Enjoy cold.
