Tangy and Fresh

Taking a cue from the classic Cuban drink, this dish adds lime, mint and brown sugar to a chicken marinade, leaning on the fragrant tang of lime and sweetness of the brown sugar to flavor the dish. Don’t be tempted to use bottled lime juice (too much sugar) or dried mint, which never has the aromatic oils of fresh leaves and stems— that’s right, never waste the stems. Flavor-rich marinades are a simple way to enhance chicken without adding salt or sugar-filled dressings.

Recipe Ingredients

  • 8 (4 oz.) chicken breasts
  • 1 medium yellow onion, chopped
  • 1 tablespoon lime zest
  • 1 teaspoon brown sugar
  • 1/4 cup lime juice
  • 1 tablespoon fresh garlic, chopped
  • 3 tablespoons fresh mint, chopped
  • 1/4 teaspoon Spanish paprika
  • 1 jalapeno, seeded and chopped

Cooking Instructions

  1. Follow the prep technique next to each ingredient.  
  2. Preheat oven to 350˚F.  
  3. In a food processor combine the ingredients except the chicken and blend well. Pour over chicken and marinade for at least 2 hours. On a sprayed sheet pan, roast the chicken for 15 minutes or until its internal temperature reaches 165˚F.
