Recipe Ingredients

  • 32 ounces silken tofu
  • ¼ cups water
  • 4 ounces dried prunes
  • ¼ cups cocoa powder
  • 2 teaspoons vanilla extract
  • 1 ¼ teaspoons cinnamon
  • 3 tablespoons maple syrup
  • 2 tablespoons cacao nibs

Instructions

  1. Place the dried prunes in a small bowl with ¼ cup of water. Let them soak for about 10 minutes to soften.
  2. Transfer the soaked prunes and water into a food processor and blend.
  3. Add the silken tofu, cocoa powder, vanilla extract, cinnamon, maple syrup and cacao nibs. Puree until the mixture is silky smooth.
  4. Transfer the pudding to a container and refrigerate for at least 12 hours before serving.
