Recipe Ingredients

  • 4 tablespoons olive oil
  • 1 cup yellow onion, julienned
  • 1 ½ tablespoons fresh garlic, minced
  • 10 cups baby spinach, washed and rinsed
  • 1 ¾ cups cannellini beans, drained and rinsed
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ½ cups water

Instructions

  1. Prepare the beans and vegetables. Set aside.
  2. Heat olive oil in a large sauté pan over medium heat. Add the onions and cook for 4 minutes, stirring occasionally, until they become fragrant and slightly translucent.
  3. Stir in the minced garlic and cook for another minute.
  4. Add spinach to the pan, followed by the cannellini beans.
  5. Season with salt and pepper.
  6. Pour in a ½ cup of water and cover the pan with a lid. Let the spinach steam for 3 minutes, or until it has wilted.
  7. Remove the lid and stir. Taste and adjust seasoning if needed.

Variations or Tips

  1. For extra flavor, finish with a drizzle of olive oil or a squeeze of lemon juice before serving.
