Recipe Ingredients

  • 3 cups onion
  • 4 ½ cups green bell pepper, diced
  • 3 cups red bell pepper, diced
  • 1 garlic cloves
  • 1 cilantro
  • 2 bay leaves
  • 1 tablespoon fresh thyme

Instructions

  1. Prepare and measure the vegetables and herbs.
  2. Add all prepped ingredients into a food processor. Pulse or blend until the mixture reaches a chunky, paste-like consistency.
  3. Transfer sofrito to an airtight container. Keep in the refrigerator for up to 1 week or freeze in portions (ice cube trays work well) for longer storage.
