This quick and easy bruschetta topping with its fresh tomatoes, garlic, basil, and ripe green olives is scrumptious served on slices of toasted Crusty Whole Wheat Baguette or the bread or cracker of your choice.

  • Total Time: 1 hour, if marinated

Recipe Ingredients

  • 3 cups grape tomatoes, quartered
  • 1/3 cup green ripe olives, diced
  • 2 tablespoons red onion, diced
  • 1 large clove garlic, minced
  • 6-8 basil leaves (depending on size), chopped
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt


  1. Prepare tomatoes, olives, onion, and herbs.
  2. Combine all ingredients together and let marinate 1 hour before serving.

NOTE: Canned green ripe olives can be found in most grocery stores. These are different than stuffed green olives in jars.
