Recipe Ingredients

  • 2 cups dried garbanzo beans
  • 1 ½ cups yellow onion, diced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground paprika
  • 2 teaspoons ground coriander
  • ¼ teaspoons ground cayenne pepper
  • 1 teaspoon baking soda
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon sesame seeds
  • 1 cup fresh parsley, chopped
  • 1 cup fresh cilantro, chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil

Instructions

  1. Soak garbanzo beans overnight in a large bowl of water, at least 3 times the volume of the beans.
  2. After soaking, test beans to be sure you can break them apart with your fingers. Drain and set aside. ​
  3. Place all ingredients into a food processor and pulse until you have a minced consistency. Do not puree. ​
  4. Chill mixture for 30 minutes.
  5. While the mixture is chilling, preheat oven to 425°F.
  6. Shape into 3-ounce patties.
  7. Brush each side with olive oil and place on a parchment-lined sheet pan.
  8. Bake for 15 to 20 minutes, until golden brown.
  9. Remove from oven and let patties rest before serving.
