Cauliflower is a mild, slightly sweet, cruciferous vegetable that is naturally high in fiber and B vitamins. Becoming famous in its own right, it can stand up tall next to the dark, leafy greens. I like its amazing versatility and lovely creamy texture when cooked and blended. It makes a delicious, quick, and easy cream soup.

Recipe Ingredients

  • 5-6 cups florets (1 small–medium head of cauliflower)
  • 2/3 cup sweet onion, chopped
  • 2/3 cup celery, diced
  • 1 teaspoon minced garlic
  • 3 3/4 cups hot water
  • 4-5 teaspoons Chicken-Style Seasoning
  • 1 1/2 teaspoons lemon juice
  • 3/4 teaspoon salt
  • 1/3 cup raw cashews
  • Unsweetened almond milk

Instructions

  1. Rinse the cauliflower and break into small pieces.
  2. In a 2-quart saucepan, sauté the onion and celery 5 minutes in a small amount of water, adding a tablespoon at a time to keep from sticking.
  3. Add the garlic and sauté 2 minutes longer.
  4. Add hot water, seasonings, and cauliflower, bring to a boil, cover with a lid, turn down the heat, and continue to cook 10–15 minutes, just until the cauliflower is tender. Turn off heat, add the cashews, and let mixture rest, covered, for 5 minutes.
  5. Carefully drain off part of the liquid and set aside. Pour the remaining contents into a blender and blend until it is creamy and smooth.
  6. Combine with the reserved liquid. It should not be thick, but pleasantly creamy. If the soup is too thick, add unsweetened almond milk until desired consistency is reached.
  7. Taste and adjust seasonings as needed. Serve with croutons.

NOTES: For an additional flavor punch, the cauliflower can be roasted prior to boiling.
