This baked vegan mac and cheese is incredibly easy to make and is a satisfying, creamy version of the classic American comfort food. Serve it hot with baked beans and salad for a delicious meal!

Recipe Ingredients

  • 18 ounces pasta (whole wheat or gluten-free)
  • 1 recipe Unbelievable Vegan Cheese Sauce
  • 1/2 cup water
  • 1/3 cup nutritional yeast flakes
  • 3/4 teaspoon salt
  • 2 tablespoons vegan butter
  • 1/4 cup bread crumbs (for top)

Instructions

  1. Preheat oven to 350°F. Spray baking dish and set aside.
  2. Prepare favorite pasta according to directions. Be careful not to overcook or it will be mushy after baking.
  3. While preparing the pasta, make your cheese sauce. Add additional water, nutritional yeast flakes, and salt, and blend until smooth.
  4. After pasta is cooked and drained, stir in vegan butter until melted and pasta is fully coated.
  5. Stir cheese into pasta until fully coated.
  6. Pour into prepared baking dish. Sprinkle bread crumbs over top.
  7. Place in oven and bake 15 minutes or until pasta is heated through and bread crumbs are toasted. Enjoy hot!
  8. Keeps 3–4 days in the fridge, although it is best fresh. Just pop it back in the oven before eating.
