Recipe: Salmon with Tomato and Mango Salsa

Heart-healthy and delicious mangoes go surprisingly well with tomatoes and basil. Try this tasty recipe tonight!

Ingredients:

  • 1 cup fresh mango, small dice
  • 2 each plum tomatoes, small dice
  • 4 tablespoons red onion, small dice
  • 2 tablespoons white balsamic vinegar
  • 1/2 teaspoon olive oil
  • 2 teaspoons fresh tarragon, chopped
  • 1/2 teaspoon fresh garlic, minced
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 2 teaspoons fresh oregano, chopped
  • 2 teaspoons fresh thyme, chopped
  • 2 tablespoons fresh basil, chopped
  • 8 three-ounce salmon filets
  • 2 teaspoons fresh oregano, minced
  • 2 teaspoons fresh thyme, minced
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions:

Dice tomatoes, mango and onions to make salsa. Add white balsamic, olive oil, fresh tarragon, garlic, kosher salt and black pepper. Set aside. Season salmon filets with remaining ingredients, place fish on a prepared sheet pan and bake for 12-15 minutes at 325 degrees. Serve with tomato and mango salsa.
