Recipe Ingredients

  • 1 tablespoon Avocado oil
  • 1 Red or yellow onion, chopped
  • 1 pound Lean ground beef, ground chicken, or ground turkey
  • 1/2 teaspoon Sea salt
  • 3/4 cup Chopped shiitake or cremini mushrooms
  • 1/3 cup Reduced sodium tamari soy sauce
  • 1/2 Head of green cabbage, shredded or 1 (16-ounce) bag coleslaw mix
  • 2 Carrots, peeled and shredded
  • 1 Stalk celery
  • 2-3 Toasted sesame oil*
  • To taste Salt and pepper
  • Garnish: 2-3 Green onions, thinly sliced

Preparation

  1. Heat oil in a large skillet and add the onion, ground meat, and salt. Sauté over medium heat for 3-4 minutes, breaking up the meat with a wooden spatula. Next, add the mushrooms and continue to cook until meat is browned, and the mushrooms have softened.
  2. Add the soy sauce, cabbage, carrots and celery. Stir to combine and sauté for 4-5 minutes allowing the vegetables to cook.
  3. Remove from heat. Add in the sesame oil and some salt and pepper to taste. Adjust seasonings, as desired. Garnish with sliced green onions.
  4. Serve over a bowl of brown rice and enjoy!

*Cook’s note: For best flavor and results, make sure you use toasted sesame oil, not regular sesame oil.
