Black Bean Chili

Entrees Surprisingly Fast, Family-friendly Meal

Chili is a surprisingly fast, family-friendly weeknight meal. This recipe varies from traditional chili by using lean organic ground turkey, and gets its rich, smoky flavor from the smoked paprika and chipotle chili powder. The diced green chilies also add a little zip, but overall this chili is not too spicy for most people!

Serves 4 to 6

Recipe Ingredients

  • 1 tablespoon avocado oil
  • 1 pound organic ground turkey
  • 1 medium yellow onion, chopped
  • 1 (14.5-ounce) can diced tomatoes
  • Optional: 1 (4.5-ounce) can green chiles
  • 1 1/2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4-1/2 teaspoons chipotle chili powder
  • 1 medium sweet potato, diced
  • 1 (15-ounce) can tomato sauce
  • 1-2 cups cups low-sodium chicken broth or water
  • 1 (15-ounce) can black beans, drained and rinsed
  • Salt and pepper to taste

Preparation

  1. Heat the oil in a large stock pot over medium-high heat. Add the turkey and cook for 4 to 5 minutes until lightly browned.
  2. Add the onion, garlic, diced tomatoes, green chiles and spices and sauté for 3 to 4 minutes over medium heat. If things begin to stick to the bottom of the pan, turn the heat down a little and add a few tablespoons of water to deglaze the pan.
  3. Add in sweet potato, tomato sauce, broth or water, and the drained beans, then simmer over low heat for 15 to 20 minutes, stirring occasionally, until the sweet potato is fully cooked.
  4. Season with salt and pepper to taste and top with cilantro, avocado and a slice of lime.
