A Middle Eastern Staple

Green beans unlike any you’ve had before. Just steamed enough to gain a dazzling green complexion, these beans are then enrobed with a sweet, peppery and nutty sauce that takes its flavor from some essential ingredients for the knowledgeable chef. Honey for rich sweetness, the tempered saltiness of soy sauce, the bright zing of fresh ginger (get a plump root from the grocer; avoid anything that looks dry or woody) and a splash of tahini. Made from sesame seeds, this Middle Eastern staple goes well with many different entrées, including falafel, with the fresh green taste of the simple bean.

Recipe Ingredients

  • 1 pound green beans
  • 2 tablespoons honey
  • 4 tablespoons water
  • 2 tablespoons tahini sauce
  • 1 tablespoon low sodium soy sauce
  • 1/8 teaspoon chili flakes
  • 2 tablespoons non-sodium rice vinegar
  • 1/2 cup green onions, thinly sliced
  • 3 tablespoons fresh ginger root, minced

Cooking Instructions

  1. In a medium size pot with a lid place a steam basket, add enough water and place the green beans.
  2. Steam for 5-7 minutes.
  3. Set the green onions aside.
  4. Meanwhile mince the ginger and place with the rest of the ingredients in a food processor and puree.
  5. After green beans are steamed serve with tahini sauce and/or fold green beans into sauce to coat.
  6. Sprinkle with scallions.
