Salmon With Tomato and Mango Salsa

Recipe Ingredients

  • 1 cup fresh Mango, small dice
  • 2 plum tomatoes, small dice
  • 4 tablespoons red onion, small dice
  • 2 tablespoons white balsamic vinegar
  • 1/2 teaspoon olive oil
  • 2 teaspoons tarragon, chopped
  • 1/2 teaspoon fresh garlic, minced
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 2 teaspoons fresh oregano, chopped
  • 2 teaspoons fresh thyme, chopped
  • 2 tablespoons fresh basil, chopped
  • 3 ounces eight salmon filets
  • 2 teaspoons fresh oregano, minced
  • 2 teaspoons fresh thyme, minced
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions:

  1. Dice tomatoes, mango and onions to make salsa.
  2. Add white balsamic, olive oil, fresh tarragon, garlic, kosher salt and black pepper. Set aside.
  3. Season salmon filets with remaining ingredients.
  4. Place fish on a prepared sheet pan and bake for 12 – 15 minutes at 325 degrees.
  5. Serve with tomato and mango salsa.
