John's Cuban Black Beans

Recipe Ingredients

  • 2 tablespoons extra virgin olive oil, Tuscan, unrefined
  • 1 fresh yellow onion
  • 4 fresh garlic cloves
  • 2 teaspoons Kosher salt, coarse
  • 1 teaspoon ground black pepper
  • 1 tablespoon ground cumin seeds
  • ½ teaspoons ground coriander seed
  • 16 ounces canned black beans
  • ¼ cups Natural Goodness chicken broth
  • 2 tablespoons canned, diced jalapeño peppers
  • 1 teaspoon hot sauce
  • 1 cup fresh lime juice
  • 1 teaspoon balsamic vinegar

Cooking Instructions

Yields: 6 Servings | Serving Size: 164.25 grams

Heat olive oil over med-high heat in a saucepan and sauté onions until translucent.

Add garlic, salt, pepper, cumin and coriander and sauté another minute until garlic is fragrant.

Reduce heat to med-low and add beans, chicken broth, jalapeños, hot sauce, lime juice, and vinegar.

Simmer for 15 minutes to incorporate flavors then serve over rice.
