1 tbsp. Smart Balance margarine
cup yellow onion, diced small
2 tsp. fresh garlic, minced
2 tsp. chipotle pepper in adobe sauce
1/3 cup honey
cup orange marmalade
2 tsp. fresh oregano, chopped
1 tbsp. spicy brown mustard
3 tbsp. lemon juice
2 tbsp. fresh cilantro, chopped
2 pounds London broil/flank steak
Salt and pepper to taste
To make orange chipotle glaze, melt the margarine in a medium space pan. Add onions, garlic, chipotle and oregano. Heat ingredients for 5 minutes on low heat until the onions are translucent. Add the rest of the ingredients, except the cilantro and simmer for 10 minutes.
Season the steak with salt and pepper. Place on a prepared grill and cook until marks are defined, approximately 3 to 5 minutes turning the steak and cooking it until its internal temperature reaches 130 degrees. Then let it rest for 5 minutes. Thinly slice the steak to a 4 oz. portion and drizzle 1oz. of orange glaze per serving. Garnish with cilantro.
Note: This Recipe can also be prepared in the oven. Just sear the steak and place on a sheet pan with non-stick cooking spray. Then baste each steak with quarter of the orange chipotle glaze and roast in the oven at 350 degrees until its internal temperature reaches 130 degrees.
