Fresh and Refreshing

This vibrant cowboy caviar-style bean veggie salad combines beans, crunchy vegetables, corn and avocado in a zesty honey garlic lime vinaigrette. A refreshing, nutrient-dense dish packed with plant-based protein and antioxidants, this recipe is a perfect summer side dish or a crowd-pleasing snack that can be enjoyed with blue corn tortilla chips.

Serves: 8 (1.25 cup servings)

Recipe Ingredients

  • 1 cup shelled edamame, cooked and cooled
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (15-ounce) can no-salt-added corn, drained and rinsed
  • 1 large red, yellow, or orange bell pepper, diced
  • 1 avocado, diced
  • 1 cup cherry tomatoes, quartered
  • ½ cups diced English cucumber
  • ½ cups diced red onion
  • ½ cups cilantro, chopped

HoneyGarlic Lime Vinaigrette

  • ¼ cup extra virgin olive oil
  • Juice of 2 limes, approximately 3-4 tablespoons
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1 clove garlic, finely minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: 1-2 teaspoons hot sauce

Directions

  1. In a large bowl, combine the edamame, beans, corn, bell pepper, tomatoes, cucumber, red onion and avocado.
  2. In a small bowl, whisk together the red wine vinegar, olive oil, honey, lime juice, garlic, salt, pepper, and optional hot sauce until well-combined.
  3. Pour the dressing over the salad mixture and gently toss to coat evenly.
  4. Serve as a side salad or as a dip with tortilla chips.
