Warm and Comforting

A lovely thing, oatmeal, credited by the Scottish with helping them survive the cold, hard winters of the Highlands. Hard to say if that is true, but a steady diet of oatmeal in any of its various guises has been shown to help with lowering cholesterol and providing easily digestible complex carbohydrates. Mostly, it’s just a good, warm breakfast, and whole grain rolled oats, combined with the flavors of cinnamon, honey and vanilla, are a comforting way to start the day.

Recipe Ingredients

  • 1 1/2 cups old fashioned rolled oats
  • 1 1/2 cups water
  • 1 cup 1% milk
  • 2 1/2 tablespoons honey
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Measure the ingredients.
  2. Place liquid ingredients in a sauce pan and bring to a rapid simmer. Add the oatmeal and whisk constantly until oats start to absorb the liquid. Incorporate the rest of the ingredients and lower the heat. Cook until liquid is absorbed. Add water if necessary.
